Smoked Squirrel

Heres a great Tree Rat recipe for you to try out after taking the kids squirrel hunting!

Things you’ll need:

Applewood (for smoking)

2-4 Squirrels (cleaned and skinned)

1-2 Tbsp Yellow Mustard (for a binder- you wont taste it)

1-2 Tbsp Bo B Q Chicken Rub

4-8 Tbsp Unsalted Butter

Directions:

  1. Preheat your smoker to 250.

  2. While the smoker is coming up to temp, go ahead and apply a thin layer of mustard over the squirrels, followed by a coat of Chicken Rub.

  3. Place the squirrels directly on the smoker and cook to an internal temp of 170.

  4. Remove the squirrels and wrap them individually in foil with 2 Tbs of the butter.

  5. Return them to the smoker and cook until they reach 200 internal. Allow to rest 10 minutes and enjoy!
